A Guide to Connecticut and New England Oysters

Why oysters from different waters taste so different, and how to enjoy them like a regular.

Every oyster is the same species, yet two oysters grown a few miles apart can taste nothing alike. That is the fun of oysters, and the reason a good raw bar offers more than one kind.

It is all about the water

Oysters filter the water around them, so they taste like where they grew. Salinity, temperature, tides and food in the water all shape the flavor. Saltier water tends to make a brinier oyster. Gentler, less salty water can make a milder, sweeter one. Cold water usually produces a firmer, crisper bite.

Long Island Sound has supported oyster harvesting for well over a century, and New England growers from Connecticut to Maine continue that tradition today. The coast offers a wide range of flavors within a short drive.

How to taste an oyster

  1. Look. A fresh oyster should look plump and glossy, sitting in its own clear liquor.
  2. Smell. It should smell like clean seawater.
  3. Taste it plain first. Chew once or twice before swallowing to notice brine, sweetness, minerality and finish.
  4. Then add a sauce. A few drops of mignonette, a squeeze of lemon or fresh horseradish.

What to pair

  • Crisp, dry white wine, sparkling wine or champagne
  • Light beer or a dry cider
  • Champagne-shallot mignonette for classic brightness

Is the old “R month” rule still true?

That saying dates from before refrigeration. Today, farmed oysters are available year-round, though flavor and texture shift with the seasons and with spawning cycles. A good raw bar adjusts its selection to what is best that week.
