Our Story

Built from the dish pit up.

One chef’s road from a Southport kitchen sink to Gordon Ramsay’s line, a James Beard-recognized dining room, and back to the Connecticut shoreline.

The Name

A tideline is the mark the sea leaves behind: where the water has been, and where the next tide will reach again.

I named this company for that line because it is where I have always cooked, at the edge where the sea meets the people who come to enjoy it. Every dish, every event and every guest list is built around one idea: bring the shoreline to the table, and make it feel like home.

The Road Here

Every kitchen taught me something.

  • Southport, Connecticut

    A dishwasher at fourteen

I started at Spic and Span in Southport, a local staple. Through high school I watched how a small family business really runs: the early mornings, the regulars who know your name, and the pride in doing the small things right.

  • University of Rhode Island

    Cooking my way through school

To afford college I took every kitchen job I could find: steward at a fraternity house, then summers on the line at the Galilee Beach Club. The money went toward a rented working kitchen, where I cooked weddings of my own.

  • Narragansett, Rhode Island

Three years at George’s of Galilee

George’s is a New England institution, and it taught me the industry at scale: high volume, tight timing, and what it takes to keep a kitchen calm on its busiest night.

  • Foxwoods Resort Casino

    Opening Hell’s Kitchen

Right after graduating I landed a dream job on the opening team of Gordon Ramsay Hell’s Kitchen at Foxwoods. I earned the sous chef title quickly and learned to lead a team inside a celebrity-chef, casino-scale operation.

  • Mystic, Connecticut

    The Shipwright’s Daughter

I moved to Mystic to cook under Chef David Standridge, a James Beard-recognized chef. I learned more there than I can put into words, especially about letting great ingredients speak for themselves.

  • Today

    Tideline Culinary

Now I bring all of it home: a mobile raw bar truck and private dining for the people of Fairfield and New London Counties.

How We Cook

Three things we will not compromise

Hospitality first

Guests remember how an evening felt. We handle every detail so hosts can be fully present at their own party.

Seafood with respect

Cold-water New England shellfish, handled carefully and served at peak freshness, bought from fish markets close to home, including Nordic Fish in Fairfield.

Discipline you can taste

Restaurant technique and timing, brought to your backyard, dock or dining room, with a clean kitchen when we leave.

The best evenings feel effortless. That takes a lot of work you never see.

That is the standard we hold ourselves to on every booking, from a six-person supper to a two-hundred-guest raw bar.
